A Delicious Party Meal

Black Bean Tostada
 
This is a Delicious Party Meal your little guest will ENJOY!!!

A Tostada is like a mini pizza and what Kid does not like PIZZA?A Tostada is very easy to prepare and would be a great healthy meal for a small party of 6 to 12 for a sleep over, movie night, back yard party or for a birthday party.

Ingredients:
3/4 Pound Black Beans
6 to 12 Tostada
1 Small Onion Diced
2 Tbsp of Olive Oil
2 Minced Cloves of Garlic
2 Tbsp of Sea Salt
1/2 Tsp of dried Chives
1/2 Tsp of Cayenne Pepper
1/2 Tsp of dried Oregano
1 Hot Pepper (Thinly sliced)
6 Tbsp Salsa
3 Tbsp of Raisins
1 Cup of Romaine Lettuce chopped fine
1/2 Cup Shredded Cheese (mozzarella, Colby Jack & sharp mixed)
6 Tbsp Sour Cream

Prepartion:
Sort and clean Black Beans.

Saute 1/3 of onion in pan using olive oil for 1 to 2 minutes.

Then begin to boil 5 to 6 cups of water in a large pot add black beans, sauteed onions, minced cloves of garlic, sea salt, cayenne pepper, chives, and oregano. Cover pot of beans and cook on medium heat for about an hour until beans are cooked. Remember to stir black beans occasionally while cooking.

For more entertainment have children to build their own Tostada. Heat oven to 350. Take cooked beans, drain water then add 1 to 2 table spoons to Tostada with salsa, fresh chopped onion, raisins, slice of hot pepper and top with shredded cheese. Bake until cheese is melted. Top with a dab of sour cream and finely chopped lettuce and serve.

Black beans are very high in fiber, folate, protein, and antioxidants, along with numerous other vitamins and minerals. Black beans also contain a wide variety of both antioxidant and anti-inflammatory properties, which combat cardiovascular disease. In addition, they can lower blood cholesterol levels and are beneficial to the digestive tract.
